Oven-Braised Swiss Steak

Oven-Braised Swiss Steak is a delicious meal. The thin round steaks are smothered in beef broth and mushrooms, which gives the meat plenty of flavor. This Swiss steak recipe has a cooking time of two hours, so this is more of a Sunday dinner than a weeknight meal. If you have leftovers, though, you're set for lunch on Monday. Yay! Make sure to serve the steaks with mashed potatoes and a vegetable to make this meal complete.

Ingredients

  • 1 1/2 pound beef round steak, 3/4-inch thick
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil, divided
  • 1/2 cup sliced onion
  • 1 cup sliced mushrooms
  • 1 3/4 cup beef broth, divided
  • 1 (10-ounce) can Golden Mushroom soup

Instructions

  1. Preheat oven to 350 degrees F.

  2. Dredge meat in flour and pound with a meat mallet on both sides, just enough to tenderize.

  3. Heat olive oil in a large skillet and brown meat on both sides. Remove meat to a casserole dish.

  4. Add another one tablespoon olive oil to the skillet and saut onions and mushrooms until tender and lightly browned. Add 1/2 cup of the broth to the pan to deglaze any bits off the bottom.

  5. In a separate bowl, whisk together soup and remaining broth. Strain out the mushrooms that come in the soup and discard. Add broth/soup mixture to the skillet and bring to a boil. Pour entire contents of the skillet over the meat in the casserole.

  6. Bake, covered, for 2 hours. Serve with mashed potatoes and a vegetable.

Is there a basic definition for Swiss steak outside of it being a thin steak dredged through flour before cooking? My memory of homemade Swiss steak involves mushrooms and onions in a gravy served over the steak, along with mashed potatoes, which is similar to what this recipe offers. I've come across other Swiss steak recipes that call for tomatoes, peppers, and onions. This particular recipe reminds me of what my mother would cook, and it's something I should definitely make again.

I make a lot of my meals in my slow cooker, but I plan on making this swiss steak recipe on a Sunday when I have the time to bake. It will be delicious with mashed potatoes and green beans. My husband loves meat and potatoes so he will be thrilled.

Oven braised steak has to be scrumptious. It must be so tender after cooking it for so long it must just melt in your mouth. This steak recipe looks scrumptious. I can't wait to try it. It may take two hours to cook but you can leave it and do other things whilst it is cooking. I will definitely make extra so I can keep some for lunch the next day!

This streak dish looks delicious, I am anaemic so I try to eat as much red meat as possible to try help combat this but I am getting fed up of fried steak so a dish like this would be a welcomed change and it helps that it's not an expensive cut as well! Could you use chicken instead?

I tried this to compare it to what I remember as a child. Not a fan, sorry. My mom and grams version is different. Not trying to overstep here, just want to share. A nice round steak, cut into 4 servings. 2 cans stewed tomatoes. I put the tomatoes in my dutch oven and use my submersible blender just to break down the bigger tomatoes pieces. I add plenty of chopped onions and a stalk or 2 of celery after I have used the blender of course. Drop in 1 beef bouillon cube and season with salt, pepper and a nice shake or 2 of garlic powder (not garlic salt). Put the steak in raw, no pre cooking needed. Bring to a boil, cover and reduce almost to a simmer. It takes about 3 hours but its so darn good. Mash up some Yukon golds and spoon the sauce over them. Absolutely delish.

Exactly. I brown my steak pieces after dredging in flour, and I cover with a sauce of blended stewed tomatoes, mushrooms, and onions, bake for 2 hours (or until meat falls apart) on 350, and serve with mashed potatoes. And it's not the same if you don't use the broth on your potatoes!
