    Bacon and Cream Cheese Stuffed Mushrooms

    Ingredients

    • 8 ounces cream cheese, softened
    • 4-6 strips of bacon, fried and crumbled; reserve fat
    • 1 small onion, finely chopped
    • 20-25 large mushrooms, stems removed
    • 8 mushroom stems, finely chopped

    Instructions

    1. Saute onion and mushroom stems in bacon fat until tender.
       
    2. Drain off excess fat. Mix crumbled bacon, onion and stems with softened cream cheese until the mixture is workable.
       
    3. Stuff each mushroom and bake at 350 deg F for 10-15 minutes.
       
    4. Finish under the broiler just until tops are golden.

    My husband can eat mushrooms til the cows come home. He will love these little bites because bacon and cheese just make everything better. Do you use any particular kind of mushroom for the recipe. I find he is partial to portabellos, but they are a bit big maybe for this recipe.

    I like the recipes but was seriously annoyed when I printed two of them and had to waste ink printing 2 pages of ads to subscribe to Ladies Home Journal! Yes, it's a good buy, but whatever I saved will now have to be spent buying paper and ink cartridges for my printer! Not happy.
