Italian Roast Beef
Make a succulent roast beef bursting with Italian flavor. This simple recipe uses basil, tomatoes, onion, garlic and red wine.
Notes
The better the wine, the better the roast. Reduce the cooking liquid at the end and serve over polenta-wonderful!

Ingredients
- 4 pounds beef roast
- 2 cloves garlic
- 2 tablespoons basil, dried or 1/2 cup fresh
- 1 teaspoon dried oregano
- Salt
- Pepper
- 1 large can Italian tomatoes with basil or one pack dried tomatoes
- 1 onion, chopped
- 1 750 ml bottle Italian red wine
Instructions
- Cut several slits in the roast and insert pieces of garlic and onions into the slits.
- In a large, covered pot (such as a Dutch oven), brown roast over medium-high heat.
- Add all remaining ingredients to pot, along with enough water to cover.
- Cook 3-4 hours until tender, covered over low heat.
- Reduce sauce to two cups.

Just do it in a crock pot,then it will simmer for several hours on it's own.Nice and tender!

The directions are not that hard to read. It says to cut several slits in the meat. The garlic is cut into small pieces along with the onion and inserted into the slits. The meat is browned in a large pot or Dutch oven. Add the rest of the ingredients and any left over onion to the pot bring to a boil, reduce heat to a simmer and simmer on top of the stove, covered, for 3-4 hours until tender. Remove meat from pot and keep warm. Bring the sauce to a boil, reduce heat to low or a simmer and cook uncovered until the sauce is reduced to two cups. Slice meat and serve with sauce.

Julio, what the heck? How about putting the roast, and ingredients in a flippin pot to simmer? Oh, you must've smoked it...or maybe you drank the wine that was to go in the pot. Good luck...

Who edits these recipes anyway???!!!!!! Re "Italian Roast Beef" 1. Do you put whole garlic cloves in slits (only 2 slits in a 4 pound roast)???? 2. After you brown the roast what do you put it and all the other ingredients in???? 3. What temperature do you set the oven at or is it possible this roast goes into a slow cooker such as a crockpot????? Or A Dutch oven and cooked on top of the stove???? 4. How do you suggest we reduce the sauce to 2 cups??? Please, Please, Please, Edit-Edit-Edit!! You seem to have some very good recipes but very poor directions. If the directions aren't messed up the ingredients are!
