Midsummer One Pot Zucchini Goulash
Anyone who successfully plants zucchini most likely has it growing out of their ears by August. What better to use it for than in Midsummer One Pot Zucchini Goulash? This will likely make it to the front of your pile of zucchini recipes, and stay there. For one, any recipe that uses only one pot is a keeper. And not to mention the combination of summer squash, ground beef and all the flavors of a typical goulash recipe will have you going back for seconds.

Ingredients
- 1 large onion
- 1/4 pound mushrooms
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 1/2 teaspoon paprika
- 1/4 cup green pepper, minced
- 2 tablespoons fresh parsley, minced
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons fresh basil, minced
- 2 cups tomatoes, peeled and diced
- 6 zucchini, sliced diagonally
- grated parmesan cheese
Instructions

Using a large pot, saute onion and mushrooms in oil until soft.

Add ground beef, cook until crumbly.

Add paprika, green pepper, parsley, salt, pepper, basil and tomatoes, cover and simmer 15 minutes.

Add zucchini to skillet; stir well, cover and simmer 20 minutes, until tender.

Serve in bowls and sprinkle with cheese.
