Betty's Baked Rice Pudding
If you're looking for a yummy dessert that's easy and won't cost much, try Betty's Baked Rice Pudding. This is a good rice pudding recipe that will be sure to delight.
Notes
Variations: 1/2 cup raisins may be added, or to make chocolate rice pudding, add 2 oz. melted, unsweetened chocolate to the ingredients before baking.
Ingredients
- 2 cups milk
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 teaspoon nutmeg (optional)
- 2 cups cooked white rice
- 2 eggs
- 1/2 vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- Place cooked rice in bowl, add all ingredients, stir to mix.
- Pour into greased baking dish or pan.
- Bake at 350 degrees for about 25 minutes.

This is a quick and easy dessert to make when you feel like eating something sweet. It is not only economical, but uses ingredients that most people have on hand. When preparing this, I would use skim milk. I would also include the nutmeg since it provides good flavor. The amount of vanilla extract to be used is not included in the recipe, but it is probably 1/2 teaspoon.
