Ground Beef, Rice, and Cabbage Hot Pot

Ingredients

  • 1 pound ground beef
  • 1 cup finely chopped onion
  • 2 garlic cloves, minced
  • 6 cups chicken broth
  • 1/2 cup ketchup
  • 3 cups finely chopped or shredded cabbage
  • 1 cup long-grain white rice
  • 1 1/2 cup frozen corn kernels
  • 2 carrots, peeled and sliced
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • 1/4 teaspoon black pepper
  • salt to taste

Instructions

  1. In large skillet, brown ground beef and onion, until meat is brown and onion is tender, stirring frequently. Drain.
     
  2. Transfer meat mixture to slow cooker.
     
  3. Add all remaining ingredients. Stir to mix well.
     
  4. Cover and cook on low setting 5-1/2 to 6 hours. Remove bay leaf.

I think this dish sounds amazing and easy to do, but I think that Bob H has a point with putting it in a casserole dish to make it a bit more crunchy and keep it from becoming sloppy or mushy. I would go for an hour in the oven and see where it sits from there if the rice is done.

If you want a mushy mess then cook this in a slow cooker!! Use a large casserole dish and bake in the oven for 1 hour covered. And yes, cut down the thyme and not call it a "Hot Pot". A Hot Pot is an Oriental way to cook.

What temp. do you set the oven to?

if you cook your hamberger&onion together you drain out your onion flavor. after you drain your meat then add the onion cook to tranlucent

I was looking forward to having this for dinner, until I tasted it about an hour ago and WAYYYYYY too much Thyme in it, maybe 1/2 teaspoon, but not 2, at the most I could see possibly 1 teaspoon, but 2 teaspoons is way too much, had to throw it all out...

When it said "Hot Pot" in the title I was expecting some kind of hot seasoning. I will try this but I plan to add some Louisianna hot sauce or chinese hot pepper sauce to the recipe. It sounds really good and easy!!

I made this for dinner tonight. It was okay but would probably be better if the rice and cabbage were added later because they turned to mush. Also if I ever make this again I will leave out or at least cut down on the thyme.
