Apple Rhubarb Cake
Everyone has tried chocolate cake, but how about rhubarb? Be unique and make this delicious apple rhubarb cake recipe. The marshmallows and strawberry gelatin put a different twist to this cake!

Ingredients
- 2 cups rhubarb (diced)
- 3 cups apple pie filling
- 1 package strawberry gelatin mix
- 1 cup sugar
- 1 teaspoon cinnamon
- 1 pkg white cake mix
- 3 cups mini marshmallows
Instructions
- Pre-heat oven to 350 degrees F.
- Mix the fruit together and put in the bottom of 9 x 11 inch glass cake/baking pan.
- Mix the gelatin, sugar, and cinnamon. Pour over the fruit, cover with the marshmallows, then pour the cake mix on top of everything.
- Bake in a 350 degrees F oven for 45 to 50 minutes.
- Cool to room temperature and then refrigerate until ready to serve. Garnish as desired.

bobbi59@cox.net I would like to know if you make the cake and pour it on to the rhubarb and apple mixture or do you spinkle the dry cake mix on top. I see where this question was asked on July 31, 2012 and it still has not been answered. Please let us know.

I HAVE MADE OTHERS LIKE THIS AND YOU JUST SPRINKLE THE CAKE MIX ON TOP OF THE FRUIT, JUST LIKE A CRISP. HOPE THIS HELPS.

when you say pour the cake mix over the top...do you mean just the dry cake mix? ...or prepared cake mix?
