    Classic Amish Shoo Fly Cake

    Ingredients

    • 4 cups flour
    • 2 cups sugar
    • 1 cup shortening
    • 2 teaspoons baking soda
    • 2 cups hot water
    • 1 cup molasses

    Instructions

    1. Preheat oven to 350 degrees F.
       
    2. Combine flour, sugar and shortening to make crumbs; reserve 1 cup.
       
    3. Dissolve soda in water, stir in molasses. Combine mixture with crumbs. Pour batter into greased 13x9" pan. Sprinkle with reserved crumbs.
       
    4. Bake 30-40 minutes or until a toothpick comes out clean.

    I grew up in Philadelphia and my mother always made it as a pie. The one thing you have to be really careful of is to make sure that the molasses is "unsulphured" molasses. Otherwise the results are most unpleasant. The only difference that I see in the recipe above and the one I watched my mother make as a kid is the pie shell.

    This is a good recipe, have made it several times. Coming from Pa. it tastes like the real shoo-fly cake found there.
