Classic Amish Shoo Fly Cake

Ingredients
- 4 cups flour
- 2 cups sugar
- 1 cup shortening
- 2 teaspoons baking soda
- 2 cups hot water
- 1 cup molasses
Instructions
- Preheat oven to 350 degrees F.
- Combine flour, sugar and shortening to make crumbs; reserve 1 cup.
- Dissolve soda in water, stir in molasses. Combine mixture with crumbs. Pour batter into greased 13x9" pan. Sprinkle with reserved crumbs.
- Bake 30-40 minutes or until a toothpick comes out clean.

I grew up in Philadelphia and my mother always made it as a pie. The one thing you have to be really careful of is to make sure that the molasses is "unsulphured" molasses. Otherwise the results are most unpleasant. The only difference that I see in the recipe above and the one I watched my mother make as a kid is the pie shell.

This is a good recipe, have made it several times. Coming from Pa. it tastes like the real shoo-fly cake found there.
