Peanut Butter Coffee Cake

Ingredients
- 1 1/2 cup packed brown sugar
- 2 1/2 cups all-purpose flour
- 3/4 cup Jif creamy peanut butter
- 2 tablespoons butter, melted
- 1/4 cup Crisco all-vegetable shortening
- 2 eggs
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup milk

Preheat the oven to 375 degrees F.

Stir 1/2 cup brown sugar, 1/2 cup flour, 1/4 cup peanut butter and the butter in a medium bowl with a fork until the mixture forms coarse crumbs.

Beat the remaining peanut butter and the shortening in a large bowl with an electric mixer on medium-high speed until the mixture is creamy.

Gradually beat in the remaining brown sugar. Add the eggs, one at a time, and beat until the mixture is fluffy.

Stir the remaining flour, the baking powder, salt and baking soda in a medium bowl.

Reduce the speed to low. Slowly add the flour mixture in three parts, alternating with the milk, and beat just until combined.

Spread the batter in a greased 3-quart shallow baking pan. Sprinkle with the crumb mixture.

Bake for 30 minutes or until a knife inserted in the center comes out clean.
