Potluck Potato Casserole

Ingredients
- 2 pounds potatoes, peeled and diced
- 1/2 cup onion, chopped
- 2 cups Velveeta cheese, cut into small cubes
- 1/2 teaspoon pepper
- 1 can (10.5-ounce) cream of chicken soup
- 1/2 cup butter, melted
- 1 pint sour cream
- 1 teaspoon salt
- 2 cups corn flakes, crushed
- 1/4 cup butter, melted
- 1/4 teaspoon pepper
Instructions
- Cook the potatoes until almost soft. Drain.
- Preheat oven to 350 degrees F.
- Mix together the onion, Velveeta cheese, 1/2 teaspoon pepper, cream of chicken soup, ½ cup butter, sour cream and salt.
- Add to the potatoes and pour mixture into a buttered casserole or baking dish.
- Mix together the corn flakes, 1/4 teaspoon of pepper, 1/4 cup of melted butter and cover the potato mixture.
- Bake uncovered at 350 degrees F for 45 minutes.

Eat small portions every 3-4 hr and it will be fine your body need fat to. Now salt cut back but not out i did and cramps hit me everywhere u can think of ! U need salt to believe me!

I haven't made this yet, but plan to. It sounds good. I don't think I'll put the salt in though since the Velveeta and cream soup are loaded with it anyway. Salt can always be sprinkled on later at the table if needed.

This sounds like a stick to the ribs good recipe. Easy to make and not too expensive for those on a low budget. MM MM MMM!
