Summer Cabbage Casserole

Ingredients
- 1 medium onion, chopped
- 5 tablespoons butter divided
- 1 1/2 pound ground, lean beef
- 1 cup cooked white rice
- 1 cabbage, finely shredded
- 2 tablespoons flour
- 3 garlic cloves, minced
- 3 tablespoons catsup
- 2 cans (8-ounces each) tomato sauce, or petite chopped tomatoes
- 1/2 cup water
- salt and pepper, to taste
- 1 1/2 teaspoon dried oregano, or mixed italian herbs
Instructions

Preheat oven to 350 degrees F.

Saute onion in 1 tablespoons of butter until soft, add the beef and brown.

Add the cook rice and saute 2-3 minutes. Pour into a deep and large casserole dish.

Arrange the shredded cabbage on top of the meat mixture.

Melt the remaining butter in a pan then blend in the flour.

Cook until bubbly-remove from the heat and stir in the garlic, catsup, tomato sauce, water, salt and pepper and oregano.

Simmer, stirring about 5 minutes.
- Pour over the cabbage in the dish. Cover and bake for 1- 1/2 hours.
