Sunday Evening Cheesy Noodle Bake
There's not a whole lot to this Sunday Evening Cheesy Noodle Bake in terms of preparation, which is why it's one of our favorite dishes to make on the weekend. Relax and still enjoy a delicious dinner with this easy casserole recipe. With three different kinds of cheese and thick sour cream added to the mix, you know this noodle bake is going to be packed with incredible flavor.

Ingredients
- 1 1/2 pound noodles
- 1 cup creamy cottage cheese
- 6 ounces cream cheese
- 1 cup thick sour cream
- 1/4 teaspoon each salt and pepper
- 1/3 cup chopped scallions or chives
- 1/2 cup grated Parmesan cheese
- butter, as needed
Instructions

Preheat oven to 350 degrees F.

Cook noodles in rapidly boiling water. Drain well and keep warm.

Mash creamy cottage cheese with cream cheese and thick sour cream.

Combine cheese mixture with the noodles and season with salt and pepper.

Mix in lightly chopped scallions or chives and turn the mixture into a generously buttered 2-quart baking dish.
- Sprinkle with grated Parmesan cheese, dot with butter and bake for 30 minutes.

If you are looking for an easy side dish, this is it. Noodles baked in a creamy cheese sauce - what could be more delicious? For a healthier version of this recipe, I would use low fat cottage cheese, lite cream cheese, and lite sour cream. The noodles should be drained while they are still underdone to ensure that they are a good consistency in the casserole after they bake in the oven.
