    Ingredients

    • 2 pounds packages plain hash browns, thawed
    • 2 cups cheddar cheese, grated
    • 1 pint sour cream
    • 1 can cream of mushroom soup (or cream of chicken, if you prefer)
    • 2/3 cup chopped onion
    • 1/2 cup chopped celery
    • 1/2 cup chopped green bell pepper
    • 1/2 cup chopped red bell pepper
    • 2 tablespoons butter
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 cups crushed cornflakes (or potato chips)

    Instructions

    1. Pre-heat oven to 350 degrees F.
       
    2. Saute onion, bell peppers, and celery in butter until soft.
       
    3. Mix all ingredients except cornflakes and spread into an oiled baking dish.
       
    4. Top with cornflakes.
       
    5. Bake 40 minutes at 350 degrees F.
