Amish Country's Chicken & Dumpling Casserole

Ingredients
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 2 garlic cloves, minced
- 1/4 cup butter
- 1/2 cup flour
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups chicken broth
- 1 package (10-ounce) frozen peas
- 4 cups chicken, cooked and cubed
- For the Dumplings:
- 2 cups buttermilk biscuit mix
- 2/3 cup milk
Instructions

Preheat oven to 350 degrees F.

Saute onion, celery, and garlic in butter until tender.

Add flour, sugar, salt, pepper, and broth; bring to a boil. Cook and stir for 1 minute; reduce heat.

Add peas and cook for 5 minutes, stirring. Stir in chicken.

Pour mixture into a greased 13 x 9-inch pan.

For dumplings, combine biscuit mix and milk with fork until moistened. Drop by spoonfuls onto casserole making 12 dumplings.

Bake, uncovered, for 30 minutes. Cover with foil and bake 10 minutes more.

My husband made thus. It was dry. It is more like biscuits on top of a chicken pot pie sauce.
