Family Sized Mexican Chicken Casserole

Ingredients
- 2 cups chicken, cooked and diced
- 2 cups Monterey Jack, shredded
- 1 cup chopped green chilies, canned
- 2/3 cup sour cream
- 2/3 can cream of chicken soup
- 1/2 cup salsa
- 8 corn tortillas
- 1 cup cheddar cheese, grated
Instructions
- In a large bowl, mix chicken, jack cheese, chilis, sour cream, soup, and salsa.
- In a 5 quart round container layer the tortillas with the mixture. Use 1 tortilla, then 1 generous cup of mixture, then tortilla; and press down. Repeat till the mixture is gone, ending with tortillas.
- Put the cheddar on top of the casserole.
- At serving time, pop the casserole out of the container, place in an oven-proof casserole dish, top with the grated cheddar, and bake at 375 for 45-60 minutes, till hot and bubbly throughout. Or, you may place in a slow cooker.

What kind of 5-quart round container is the recipe referring to? There are all kinds. Then when baking, is the stack put into the oven as a stack, or separated into separate piles for baking? It sounds like the whole thing is baked piled up in which case it's impossible to put cheese on top of each serving when baking.

Use your brain, its written simply enough....use a container that the tortilla fits in and layer according to the recipe. And you don't put cheese in each layer after its put together, duh!, the jack cheese is mixed with the chicken, etc. After adding the last layer of tortillas when you are ready to bake the casserole and invert it into a casserole dish, most appropriately shaped one, then add the grated cheddar cheese on top and bake.

Honestly - I like most of the recipes on this site, however, the editing is very poor. Almost every recipe I see, there are glaring errors. In this recipe (#4) says "At serving time, . . . . . bake at 375 for 45-60 minutes." That doesn't sound like serving time to me.

momofASK---I agree with you! And its not just this recipe site :(. I don't understand why would you put the ingredients in a round container and THEN put it in a casserole dish to bake? Especially when there are no directions to put it in the freezer or oven! How do you 'pop' something out of a container that would surely fall apart and make a huge mess? Very poorly written.

My mom made a variation of this recipe when I was growing up. She would tear the tortillas in half and in half again for her layers; instead of chicken, she used browned ground beef and added minced raw onion to the ingredients. Instead of mixing the other ingredients, she layered them as well, beginning with the tortillas, followed by the ground beef, then the onions, then the salsa, then the cheese - ending with cheese sprinkled on top of the stack. THEN she'd loosen the stack from the sides of the baking dish and pour a can of cream of chicken soup over the top, ensuring that it drizzled down the sides. About 15 minutes before the end of the baking time, she's sprinkle more cheese on topto melt.

The ingredients in this casserole have been sized down for a family (from the Grandma's Favorite Mexican Chicken Casserole), but the instructions have not been corrected. This is sure to be confusing to people. For instance, you are not going to be dividing the cheese into 7 portions! These instructions need to e fixed.
