Georgia Style Mexican Chicken
Georgia Style Mexican Chicken is a spicy mexican chicken casserole with the zippy flavors of green chilies, pimientos, and taco-spiced Doritos. If you're using cooked chicken, the casserole comes together in just a few minutes before baking.
Notes
If you would like to boil a whole chicken yourself, reserve 2 1/2 cups cooking liquid to substitute for chicken stock
Ingredients
- 5 cups cooked chicken
- 8 ounces pimientos, drained and chopped
- 2 1/2 cups chicken stock
- 2 cans cream of mushroom soup
- 2 cans cream of chicken soup
- 6 ounces extra sharp cheddar cheese, grated
- 2 packages Doritos Taco-flavored chips
- 8 ounces green chillies, not drained
- 3 cups Mozzarella cheese, shredded
- salt to taste
Instructions
- Preheat oven to 350 degrees F.
- Combine canned soups, pimientos, chicken stock, green chilies, and chicken in a large bowl.
- Layer casserole dish starting with slightly crushed Taco chips, chicken mixture, and cheddar cheese, and ending up with Taco chips on top and lined along sides of pan.
- Sprinkle casserole with mozzarella cheese and bake at 350 degrees F for 45 minutes.
