Florentine Skillet Dinner

Ingredients
- 1/2 cup diced onions
- 8 ounces bulk pork sausage
- 2 cups cubed cooked chicken
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (10-ounce) package frozen spinach, thawed and squeezed dry
- 1/2 cup long-grain rice, uncooked
- 1 cup chicken broth
- 1 teaspoon thyme leaves
- 1/4 teaspoon red chili flakes

In a large skillet, saute onion and sausage over medium heat until onion is soft and sausage is no longer pink, for 3 to 4 minutes. Drain.

Add remaining ingredients and stir to combine. Bring to a boil.

Cover and reduce heat. Simmer until liquid is absorbed and rice is tender, about 25 minutes, stirring once during cooking time.
