Fried Chicken Breasts with Cilantro Sauce
Could be that this is the best fried chicken recipe you'll ever try! It's very different from the traditional southern fried chicken recipes you see with breading and deep frying, and it is oh so delicious!

Ingredients
- 2 cups cilantro leaves
- 2 garlic cloves
- 1 jalapeno, seeded
- 2 tablespoons distilled white vinegar
- 2 tablespoons water
- 1 cup mayonnaise
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 (6-ounce) bag potato chips, finely crushed
- 4 (6-ounce) skinless, boneless chicken breast halves, pounded 1/2 inch thick
- 2 tablespoons vegetable oil
Instructions
- In a blender, combine the cilantro, garlic, jalapeño, vinegar and water and purée.
- Transfer to a bowl and whisk in the mayonnaise. Cover and refrigerate.
- In a shallow bowl, lightly beat the eggs.
- In another shallow bowl, combine the flour, salt and pepper.
- Spread the potato chips in a third bowl.
- Lightly coat the chicken with the flour, shaking off any excess, then dip in the beaten eggs.
- Coat the chicken with the potato chips.
- Heat the oil in a large nonstick skillet until shimmering.
- Add the chicken and cook over moderately high heat until golden and cooked through, about 5 minutes per side.
- Transfer to plates. Serve at once with the cilantro sauce.

This sounds sooo good....looks like I'm the first one to comment with a thumbs up. My husband Ed and I love Cilantro, Garlic and Jalapeno. We plant Cilantro and Jalapenos every season. Can't wait to taste it. YUUUUUUM-OOOOOOOO!

@Char34 and Barbie Doll: Cilantro is an unusual herb in that it tastes very different to different people. Some people find the flavor of cilantro offensive. If you don't like cilantro, I would suggest making this recipe without the herb. It will taste just as yummy with the warm flavors of garlic and jalapeno! -- Editors of RecipeLion

////i wouldn't even try this recipe. I have cooked long enough, and cook well enough to know what will go together well, and the combination of tastes in this recipe do NOT go together well. It sounds terrible!! In the first place, "Traditional" Southern Fried chicken is NOT deep fried. That is what resturaunts have called southern Fried Chicken, for as far back as I can remember, and I am 77. For as long as I have been old enough to eat anything other than baby food, I have eaten Southern Fried chicken, cooked by some of the best southern cooks, including me, and it is NOTHGING like what they serve in resturaunts. It is skillet fried, NOT deep fat fried.
