Two Cheese Stuffed Chicken Breast Recipe

Ingredients
- 4 boneless chicken breasts
- 4 ounces soft goat cheese
- 1 cup shredded colby
- 1 egg
- 1/2 cup bread crumbs
Instructions
- Preheat oven to 375 degrees F.
- Mix goat cheese and colby with fork until blended.
- Place chicken breasts between 2 layers of Saran wrap.
- Pound to flatten silghtly.
- Spread 1/4 of cheese mixture on each breast.
- Starting at short end, roll up breast and secure with toothpicks.
- Mix egg and 1 tablespoon water.
- Place bread crumbs in shallow dish or on plate.
- Dip chicken in egg mixture, then coat with bread crumbs.
- Place on greased baking pan.
- Spray chicken lightly with nonstick cooking spray.
- Bake 25 to 30 minutes.
- Let stand 5 minutes before serving.
