Ingredients
- 1 tablespoon olive oil
- 1 large red onion, chopped
- 1 clove of garlie, chopped
- 1 tablespoon chili powder
- salt, to taste
- pepper, to taste
- 1 can (24-ounces) tomato sauce
- 1/2 cup water
- 1 can (14-ounces) pinto beans
- 1 medium butternut squash, skinned and chopped into 1/2 inch cubes
- 4 chilic in adobo sauce, chopped
- 3/4 cup quinoa cooked according to directions
- Cheddar cheese, sour cream, and jalapenos to top as desired
Instructions
- Heat the oil in a large pot over medium and add the onion and garlic. Cook until the onion softens.
- Add the chili powder, salt, and pepper and mix to combine, cooking for approx 1 more minute.
- Add in the tomato sauce, water, pinto beans, squash, and chilis, bringing to a simmer. Cook for approx 10 minutes.
- Add in the quinoa and stir in completely. Cook for another 10-20 minutes until the squash has softened.
- Top with sour cream, Cheddar cheese and jalapenos.

I love lots of these recipes but I wish they would show the calories & fats in these recipes.
