Ingredients
- 40 graham cracker singles (2 packs)
- 12 ounces mini chocolate chips
- 2 cups finely chopped nuts (walnuts or almonds)
- 1 cup brown sugar
- 1 stick butter, softened to room temperature
- 1 cup half-and-half (or 1/2 cup each milk and cream)
- FOR FROSTING:
- 12 ounces (1 package) chocolate chips
- 12 ounces (1 package) butterscotch chips
- 1 to 2 tablespoons peanut butter
Instructions
- Preheat oven to 375 degrees F.
- Put the grahams in your processor and process in short bursts until they are crushed similar to the texture of medium-fine chopped nuts. Pour into a bowl.
- Cream butter and sugar in processor.
- Add to crumbs and mix. You can use a mixer on low speed.
- Add cream, nuts and chips and mix.
- Fill baking mini-cups 2/3 full.
- Bake on a cookie sheet for 10-12 minutes, just until set. Do not overbake.
Frosting:
- Melt chocolate and butterscotch chips in a saucepan over low heat (or in microwave on 50% power) with the peanut butter.
- Stir to blend well.
- Use to frost cookies.
