Ingredients
- 3/4 cup softened margarine
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla (or vanilla and almond combination)
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Combine margarine and sugar and beat until light and fluffy.
- Add eggs and vanilla and blend well.
- In a separate bowl, combine flour, baking powder, and salt. Add to butter mixture and beat until smooth.
- Wrap the dough in plastic wrap and chill for at least 1 hour.
- Preheat oven to 375 degrees F.
- On a lightly floured surface, roll out a quarter of the dough to 1/8-inch thickness. Cut into shapes and transfer to parchment-lined cookie sheets.
- Bake 8-10 min, or until edges have slightly browned. Allow to cool completely on cookie sheets.
