    Ingredients

    • 1/2 cup butter or margarine, softened
    • 1/2 cup brown sugar, packed
    • 1/2 cup sugar
    • 1 egg
    • 1 teaspoon vanilla
    • 1 1/4 cups flour, unbleached
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 cups crisp rice cereal
    • 1 1/2 cup flaked coconut
    • 1 cup dates, pitted and chopped

    Instructions

    1. Preheat oven to 350 degrees F.
       
    2. Cream sugars and butter together until smooth.
       
    3. Add egg, and vanilla; beat well.
       
    4. Stir together flour, baking powder, baking soda, and salt; stir dry ingredients into butter mixture.
       
    5. Fold in crisp rice cereal (like Rice Crispies or Corn Flakes), coconut, and dates.
       
    6. Form into 3/4-inch balls; place 2-1/2 inches apart on ungreased cookie sheet.
       
    7. Bake until lightly browned, about 10-12 minutes. Cool slightly before removing to a rack to cool completely.
