Ingredients
- 1/2 cup butter or margarine, softened
- 1/2 cup brown sugar, packed
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cups flour, unbleached
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups crisp rice cereal
- 1 1/2 cup flaked coconut
- 1 cup dates, pitted and chopped
Instructions
- Preheat oven to 350 degrees F.
- Cream sugars and butter together until smooth.
- Add egg, and vanilla; beat well.
- Stir together flour, baking powder, baking soda, and salt; stir dry ingredients into butter mixture.
- Fold in crisp rice cereal (like Rice Crispies or Corn Flakes), coconut, and dates.
- Form into 3/4-inch balls; place 2-1/2 inches apart on ungreased cookie sheet.
- Bake until lightly browned, about 10-12 minutes. Cool slightly before removing to a rack to cool completely.
