Ingredients

  • 125 grams butter
  • 150 grams sugar
  • 1 egg
  • 1 teaspoon cinnamon
  • 50 grams ground haselnut
  • lemon zest to taste
  • 275 grams flour
  • 1 teaspoon baking powder

Instructions

  1. Beat butter until light and creamy.
     
  2. Blend in sugar, cinnamon, egg, hazelnuts, zest, flour and baking powder.
     
  3. Mix well and roll out (very thin).
     
  4. Cut into shapes with cookie cutters (or Spekulatius form, if you find one).
     
  5. Place cookies on greased cookie sheet and bake at moderate temperature (try 350 degrees F, maybe less) until light brown and crisp.
     
  6. These cookies should be very thin, crisp, and evenly browned.
