Ingredients
- 125 grams butter
- 150 grams sugar
- 1 egg
- 1 teaspoon cinnamon
- 50 grams ground haselnut
- lemon zest to taste
- 275 grams flour
- 1 teaspoon baking powder
Instructions
- Beat butter until light and creamy.
- Blend in sugar, cinnamon, egg, hazelnuts, zest, flour and baking powder.
- Mix well and roll out (very thin).
- Cut into shapes with cookie cutters (or Spekulatius form, if you find one).
- Place cookies on greased cookie sheet and bake at moderate temperature (try 350 degrees F, maybe less) until light brown and crisp.
- These cookies should be very thin, crisp, and evenly browned.
