Butterscotch Rolled Cookies
This recipe allows you to create fancy shaped and glazed cookies that are just as delicious as they are adorable! Butterscotch Rolled Cookies are great for the holiday season.
Ingredients
- 1 cup brown sugar
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 egg
- 1/2 teaspoon vanilla
- 1 3/4 cup flour, sifted
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon cinnamon
- Glaze:
- 1 1/2 cup confectioner's sugar:
- 1 egg white, slightly beaten
- 1 tablespoon butter, melted
- 1/8 teaspoon salt
- food coloring (optional)
Instructions
- Mix sugar, salt and butter thoroughly.
- Add egg and vanilla and beat till fluffy.
- Sift flour, baking powder, soda and cinnamon and add to mixture.
- Chill well, several hours, or overnight.
- For the glaze, mix the confectioners sugar, egg white, butter, salt, vanilla and food coloring together until smooth.
- Roll the dough out until it is about 1/8 inch thick.
- Cut into fancy shapes and bake on ungreased cookie sheet for 8-10 minutes at 350 degrees F.
- Let cool and glaze.
