English Toffee Cookies

Ingredients
- 1 cup butter
- 1 cup brown sugar, (packed)
- 1 egg, separated
- 2 cups flour
- 1/2 cup finely chopped pecans
Instructions
- Preheat oven to 350 degrees F.
- Melt butter and mix in the brown sugar.
- Add one beaten egg yolk and mix well.
- Then add flour and mix; pat the mixture in a jelly roll pan.
- Beat the egg white and spread over the top.
- Sprinkle chopped pecans over beaten egg white.
- Bake at 350 degrees F for 30-35 minutes.
