Lemon Cooler Cookies

Ingredients
- 1 cup unsalted butter, room temperature
- 1/2 cup sugar
- 1 1/2 tablespoon grated lemon peel
- 1 egg yolk
- 1 teaspoon lemon extract
- 1/4 teaspoon salt
- 2 1/2 cups flour
- 1 cup sugar
- powdered sugar for sprinkling
Instructions
- Preheat oven to 375 degrees F.
- Using electric mixer, cream butter in medium bowl until light.
- Gradually add 1/2 cup sugar and beat until fluffy, stopping occasionally to scrape down sides of bowl.
- Beat in lemon peel, yolk, extract and salt. Add flour and beat just until blended (if dough is very stiff, beat with a wooden spoon).
- Roll dough by tablespoonfuls into balls. Set dough balls on ungreased heavy baking sheets, spacing 3 inches apart.
- Dip bottom of 2-1/2 inch round glass into sugar. Press down onto 1 dough ball, flattening into 1/4 inch thick round.
- Repeat with remaining dough balls. Bake at 375 degrees F until cookie edges begin to brown, about 10 minutes.
- Transfer cookies to racks and cool. Sift powdered sugar over tops.

I am hoping this tastes like the lemon cooler cookies of long ago. I use to eat these cookies all the time in the 70's. I have been trying to find these forever once the chain supermarket i shopped at closed. Just found out they were made by Sunshine and than was bought out by another company and they discontinued them. It seems like I am not the only one who misses these. If you Google them u will find a lot of old fogey's like me miss these. I can hardly wait to make these and see if they are anything like my memories.
