Carrot Cookies
If you like carrot cake you won't be able to get enough of this quick and easy cookie recipe. Carrot Cookies are all the rage, make them instead of cake or cupcakes if you want to impress at your next party.

Ingredients
- 3/4 cup butter (1 1/2 sticks)
- 3/4 cup sugar
- 1 cup grated carrots
- 1 egg
- 1 teaspoon grated orange rind
- 2 1/4 cups sifted flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
Instructions
- Preheat oven to 375 degrees F.
- Cream butter and sugar together.
- Beat in carrot and egg, blending well. Mix in the rind and dry ingredients, sifted together.
- Dip out dough by teaspoons onto greased cookie sheet.
- Bake in 375 degrees F oven for 10-12 minutes or until cookies are a delicate brown around edges.
- Loosen from pan while still warm.
- Cool on a wire rack and store in air-tight container.
