Cashew Nut Cookies
These colorful green and red Cashew Nut Cookies are a perfect fit to add to your Christmas cookie recipes list. It's a quick and easy cookie recipe to make and absolutely scrumptious.
Notes
Variation: Interesting cookies can also be made substituting walnuts or pecans for the cashews in both the cookie and icing ingredients.

Ingredients
- 1/2 cup butter
- 1 cup light brown sugar, packed
- 1/3 cup sour cream
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 3/4 cup flour, unsifted
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup cashews, chopped
- Icing Ingredients:
- 2 cups powdered sugar, sifted
- 3 tablespoons Butter, softened
- 1/2 teaspoon vanilla extract
- 1/4 cup milk
- red or green food coloring
- whole cashews for garnish
- dash of salt
Instructions
- Preheat oven to 375 degrees F. Grease 2 large cookie sheets.
- In large mixing bowl with electric mixer at medium speed, cream butter and brown sugar until light and fluffy.
- Add sour cream, egg, and vanilla. Mix until well combined. Stir flour, soda, and salt together.
- Add to creamed mixture and mix until well combined. Fold in chopped cashews.
- Drop dough by teaspoons onto greased cookie sheets. Bake at 375 degrees F for 8 to 10 minutes.
- Mix together all icing ingredients, except whole cashews.
- After cookies have cooled, spread icing over tops. Garnish each with a cashew.
