Crunchy Potato Chip Cookie

Ingredients
- 1 cup softened butter or margarine
- 1 cup sifted powdered sugar
- 2 egg yolks
- 1 teaspoon vanilla
- 1 1/2 cup all purpose flour
- 3/4 cup crushed fresh potato chips
- 1/2 cup finely chopped pecans
Instructions
- Preheat oven to 350 degrees F.
- Combine butter and the 1 cup powdered sugar in a large mixing bowl.
- Beat with an electric mixer on medium speed for 3 minutes.
- Add egg yolks and vanilla and beat until well mixed. Gradually beat in the flour.
- Stir in potato chips and pecans with a wooden spoon.
- Drop by rounded teaspoonfuls onto a greased cookie sheet.
- Bake at 350 degrees F for 10 minutes. Transfer to a wire rack.
- While cookies are still warm sift with powdered sugar. Cool completely. Store in airtight containers.
