Great Pumpkin Cookies
I was looking for yummy holiday cookie recipes and was excited to find these Great Pumpkin Cookies. I made them for the kids when we got back from pumpkin picking, they'll be wonderful for Thanksgiving.

Variation: Substitute 1 cup of raisins for chocolate chips.

Ingredients
- 4 cups flour
- 2 cups quick uncooked oats
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 1/2 cup butter, softened
- 2 cups brown sugar
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 can (16-ounce) solid pack pumpkin
- 1 cup semi-sweet chocolate morsels
Instructions
- Preheat oven to 350 degrees F.
- Combine flour, oats, soda, cinnamon and salt; set aside.
- Cream butter; gradually add sugars, beating until light and fluffy.
- Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition.
- Stir in morsels. Bake at 350 degrees F for 20-25 minutes, until cookies are firm and lightly browned.
- Remove from cookie sheets; cool on racks. Dough may be frozen in air-tight container.
- Thaw in refrigerator; bake as directed. Decorate using icing or peanut butter to affix assorted candies, raisins and nuts.
