Ingredients
- 1 cup fully cooked ham, diced
- 1 pound corn chickpeas
- 1/2 cup onion, minced
- 1 clove garlic, minced
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 1 package frozen spinach, chopped
- 1 can (about 10 ounces) tomatoes
- 1 potato, diced
- 2 tablespoons dried parsley
- 1 quart chicken broth
- 1/2 cup elbow macaroni, uncooked
- grated Parmesan cheese for garnish
Instructions
- Combine ham, chickpeas, onion, garlic, carrots, celery, spinach, tomatoes, potato, parsley, and chicken broth in a slow cooker. Add water if chicken broth does not cover all ingredients. Cover and cook on high for one hour, then switch to low and cook for 6 to 8 hours, or until carrots are tender.
- Add macaroni and let cook on low for 30 minutes.
- Serve with grated cheese on top.

I think this sounds really great. One could add green beans, Sweet Italian mild sausage, pre cooked. Zucchini and or cabbage to this recipe.
