Best Chicken Salad Ever
Not only is this the best chicken salad ever, it's the easiest, too! With just 5 basic ingredients (plus salt and pepper, if you want), it's quick and simple, and is perfect for your next picnic or party.

Ingredients
- 4 chicken leg quarters, boiled or roasted, meat removed and cut into chunks
- 1 can (8-ounce) pineapple tidbits, drained
- 1 cup frozen peas, parboiled and chilled
- 1/2 to 1 cup chopped walnuts
- mayonnaise, to taste
- salt and pepper, to taste
Instructions
- Mix all of the ingredients in a bowl with enough mayonnaise to make it moist.
- Grind in some black pepper and add salt to taste.

How can you not look at a recipe that says 'best chicken salad ever?' I had to look and see what this was all about. It looks absolutely scrumptious! I'm looking forward to using pineapple with peas. I can't wait to see what that tastes like. I also love nuts so am looking forward to adding those too.

This chicken salad recipe sounds very delicious, but it wouldn't feed very many folks if you brought it to a cookout. I'd probably increase this recipe by at least 4 times. Personally, I'd use 'lite' mayo in it, but "Miracle Whip 'lite' " also would work well. If you'd like to use this chicken salad on Croissants, just chop your chicken and pineapple a little bit finer, and serve on Croissants with Bib (Boston) lettuce, with a nice fruit garnish, such as a small bunch of red seedless grapes on the side This is a nice little luncheon if you're havng your girlfriends over. I'd serve a pitcher of green iced tea with it, and some lemon cookiies for dessert. Needless to say, your luncheon would be a huge success!

I used Mandarin Orangs and added some Bacon... it is delish & what's for dinner tonite with some homemade rolls :-)

@gene1 - Not all chicken salad recipes include pineapple, but many do. If you are allergic to pineapple you should read the ingredients on the package or ask the cook what is included in the chicken salad recipe. -The editors of RecipeLion

Now I know why I end up in hospital after eating chicken salad. I didn't realize Pineapple was being put in it. I AM ALLERGIC TO PINEAPPLE.
