Oregon Berry Cobbler
Load up on delicious berries in this easy to make fruit dessert. You won't be able to resist this Oregon Berry Cobbler with its blackberries and buttery flavor. Cobbler recipes like this are simply divine.
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1 cup flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk or buttermilk
- 6 cups marion, black, boysen or blueberries
- 1 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon nutmeg
- 2 tablespoons lemon juice
- 2 tablespoons butter
Instructions
- Preheat oven to 350 degrees F. Lightly spray 11x7 (2-quart) baking dish.
- Gently toss berries with sugar, cornstarch, nutmeg and lemon juice and pour into baking dish. Dot top with pieces of butter.
- For topping mix butter and sugar in food process until light fluffy. Add flour, baking powder, salt and milk. Mix to combine. Batter should be stiff.
- Spoon topping over berries, which will not be totally covered. Bake for 40 minutes until pastry is golden brown and filling is bubbling. Good warm, room temperature or chilled.
