    Cherry Easter Biscuits

    Ingredients

    • 4 ounces (110g) butter
    • 3 ounces (75g) caster sugar plus 1-2 tablespoons for sprinkling
    • 1 egg, separated
    • 7 ounces (200g) flour
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon ground cinnamon
    • 3 ounces (75g) dried cherries

    Instructions

    1. Preheat oven to 200°C / 400°F / Gas 6.
       
    2. Grease a baking sheet.
       
    3. Cream butter and sugar together in a bowl and beat in the egg yolk.
       
    4. Sift the flour, ginger and cinnamon together into the creamed mixture.
       
    5. Add the dried cherries.
       
    6. Knead the dough on a lightly floured surface and roll out to 1/4-inch (1/2 cm) thickness. Use a 3-inch (8cm) cutter to cut out 12 biscuits.
       
    7. Place on the sheet and bake for 10 minutes.
       
    8. Lightly beat the egg white.
       
    9. Remove biscuits from the oven, brush with egg white.
       
    10. Sprinkle with caster sugar, bake for a further 5 minutes until golden.

    Well what do ya know?? I never look on the other side of the measuring cup...the Metric side. But there it is...the answer to the conversion questions. Cool! Now I'll make these biscuits..L

    I made this and my family loves it! The conversion is easy. Using a liquid or dry measuring cup just get as near to the measure stated in this recipe. 4oz. butter is one stick 3oz. sugar is a little over 13 cup 7oz. flour is almost 1 cup 3oz. dried cherries is a little less than a 12 cup I didn't have the sugar so I used regular granular sugar. They came out ok but the sugar stated would be better to use for this. YUM!

    For most baking recipes, it's ideal to weigh your ingredients. There are relatively inexpensive kitchen scales available at most superstores and bathbed type stores.

    I may be ignorant, but I can't find a conversion chart to convert ounces for the butter, sugar, flour and cherries. My measuring cups come in fractions of cups. I would appreciate it if I could get this recipe in measurements I can understand.
