Apricot and Passion Fruit Soft Serve

Ingredients
- 1 cup dried apricots, chopped
- 297 grams packet silken tofu, drained
- 3/4 cup soy drink
- 1/4 cup sugar
- 1 ripe banana, mashed
- 1/4 cup slivered almonds, toasted
- pulp of 3 passion fruits
Instructions
- Place apricots and 1/2 cup of water in small saucepan over medium heat.
- Cover and simmer for 3 minutes or until soft (or microwave, uncovered, on HIGH for 3 minutes). Leave to cool.
- Process the apricots, tofu, soy milk, sugar and banana in a food processor until smooth.
- Pour the mixture into a cake tin, cover with foil and freeze for several hours or until partly set.
- Transfer to a food processor; process in batches until smooth (or churn in an ice-cream maker for 20 minutes).
- Fold in the almonds and passion fruit pulp. Serve immediately.
