Lavender Orange Ice Cream

Ingredients
- 2 cups fresh orange juice
- 2 cups whipping cream
- 1 tablespoon white wine
- 2 egg whites
- 1/2 cup lavendar infusion (recipe provided)
- 1/2 cup honey
- 1/4 cup sugar
Instructions
- Combine orange juice, whipping cream, and white wine.
- Mix the sugar, honey, and lavendar infusion until sugar is dissolved. Add to orange juice mixture.
- Beat 2 egg whites until stiff. Fold into the mixture.
- Pour the combined ingredients into a home ice cream freezer and follow the manufacturer's instructions for freezing.
Lavender Infusion
- 1 cup fresh lavender flowers, or 6 tablespoons dried lavender flowers
- 3 cups distilled water
- Bring water to a boil (in a non-reactive pot) and pour over the flowers; steep 15 to 20 minutes.
- Strain and save in a non-reactive container.
