Million Dollar Potato Dumplings

Ingredients
- 8 medium potatoes
- 3 egg yolks, beaten
- 3 tablespoons corn starch
- 1 cup bread crumbs
- 1/2 teaspoon pepper
- 1 1/2 teaspoon salt
- flour, as needed
Instructions

Peel potatoes and boil in salted water until soft. Drain and mash smoothly.

Blend in egg yolks, corn starch, bread crumbs, salt and pepper. Mix thoroughly and shape into dumplings. You may need to add flour to make the dumplings hold together.

Roll each dumpling in flour and drop into rapidly boiling water.
- Cover and cook for about 15 - 20 minutes.

I have never gotten to like dumplings but the children and man of the house love them so I made these in an attempt to win The Best Mother and Wife in the World award, lol! Not sure I won the award but the family agreed that the dumplings were very good indeed and wanted to know when I would be making them again.

They are best served with a meat dish that has sauce, such as Goulash, Sauerbraten or a pork/beef roast.

Great suggestion! If you like onions, how could you go wrong? lol I vote for onions! Lightly sauteed sweet onions in butter but not caramlized, would be my choice. Maybe with a light cheese sauce drizzled on them, not drenched.
