Ingredients
- 1 tablespoon cumin
- 1 tablespoon thyme
- 1 teaspoon salt
- 1 1/2 teaspoon black pepper
- 1 dash cayenne pepper
- 1 teaspoon garlic powder
Instructions
1. Mix together ingredients.
2. Remove the membrane from the underside of the ribs. Sprinkle ribs with spices, and let marinade for as long as you want.
3. Use a barbecue grill with the coals on the sides. Stand up the ribs in a rib rack in the center of the grill. The convection effect of the coals on the side will cook the ribs.
4. Keep the temperature as low as possible (about 200 F if you can) and feed the coals every half hour.
5. Once they're done (about 1 1/2 hr-> 2 hrs) you can put barbecue sauce on them, or you can serve the sauce on the side.
Note: Make sure you don't put the ribs directly over the coals--the fat from them will cause a fire and burn the ribs.

dry rub very good but if you prefer a super tasty sauce try equal parts heinz ketchup and my favorite bbq sauce open pit! combine over. low heat let simmer twenty minutes. add equal parts brown sugar and honey to sauce. simmer ten more minutes. add butter to taste right at end of simmer and whisk in till melted. baste ribs or any meat your cooking liberally last twenty minutes of cooking. make sure to fix your plate first. when it is served there wont be any left for you! enjoy!!!
