Ingredients
- 8 boneless, skinless chicken breasts
- 12 ounces frozen apple juice concentrate, thawed
- 1/3 cup honey
- 2 tablespoons lemon juice
- 1/4 cup brown sugar
- 2 teaspoons cinnamon
- 3 Granny smith apples, cored and cut into rings
Instructions
- Mix apple juce concentrate, honey, lemon juice, brown sugar and cinnamon in a saucepan.
- Heat over medium heat about three minutes, stirring constantly.
- Set aside one cup to use as sauce, use remaining for baste.
- Put apple rings on grill and brush with basting sauce.
- Grill eight minutes, basting consistently.
- Turn apples over and baste and grill for eight to ten minutes, or until tender.
- Meanwhile, place chicken on grill and brush with basting sauce.
- Grill for five minutes, basting often; turn and grill for an additional five to seven minutes or until internal juices run clear.
- Serve chicken and apples with reserved sauce and steamed veggies (green beans, carrots, yellow bell peppers).
