Smoked Vegetables
This is the healthy portion of you meal. Add some veggies to your grilled meal. Throw them on the grill and get ready to serve.

Ingredients
- 2 zucchini, sliced in 3/4-inch-thick disks
- 2 yellow squashes, sliced in 3/4-inch-thick disks
- 1 eggplant, sliced in 3/4-inch-thick disks
- 2 red peppers, deveined and cut into 3-inch-wide strips
- 2 yellow peppers, deveined and cut into 3-inch-wide strips
- 1 pint cherry tomatoes, stemmed
- About 3/4 cup of your favorite bottled Italian salad dressing
Instructions
Yield: 6-8 servings
1. Place all the vegetables in a disposable 8-by-12-inch aluminum tin.
2. Pour the salad dressing over the vegetables and toss, making sure the vegetables are well coated.
3. Put the tin of vegetables in a 250-degree smoker for 4 hours.
4. Before serving, remove the vegetables from the tin and then grill each side lightly.
NOTE: To smoke whole ears of corn, place the corn, in its husk (it isn't necessary to coat with salad dressing) in the smoker for 6 or 7 hours.
