Tomato Macaroni Salad

A salad does not have to include lettuce to be tasty. Try a different spin on the average quick and easy side dish recipe with this simple recipe with fresh tomatoes and savory pasta. This pasta salad might become your new favorite side dish recipe.

Notes


  • If your tomato is ripe and juicy the salad will take on a delicious tomato flavor. Hot house tomatoes are not suitable for this recipe.

Ingredients

  • 1/2 pound elbow macaroni, cooked
  • 2 tablespoons sweet white onion, chopped
  • Hellmann's Real Mayonnaise, to bind
  • 2 tablespoons sour cream
  • Salt and pepper to taste
  • 1 large ripe fresh garden tomato

Instructions

  1. Cook macaroni till tender.
     
  2. Stir in onion, enough Hellman's mayo to bind and sour cream to taste. Season with salt and pepper.
     
  3. Now chop or dice a large juicy tomato and stir into salad. 
     
  4. Chill well or serve warm when freshly made.

Putting tomatoes and pasta together is a natural pairing in most instances but I don't think I've ever had it in a cold salad before. It sounds lovely though, especially if the tomatoes are nice and juicy! The first thing I thought of after reading this recipe is why not a BLT pasta salad...I mean it's already got most of the ingredients needed. Just add some bite-size pieces of bacon and instead of lettuce, the pasta happily agrees to takes its place and all is good in the world.

I clicked on this recipe expecting a Red White and Blue macaroni Salad, and instead got sent to a Tomato Macaroni Salad...um, i'm confused??

My family loves it with cucumbers,tuna and peas along with the tomato's minus the sour cream. You can serve it as a meal or as a side.
