Ingredients
- 3 to 4 unpeeled potatoes, boiled and cooled
- 4 cups cabbage, chopped and blanched
- 1/2 medium yellow onion, peeled and chopped
- 1 smallish zucchini, grated
- 4 to 5 slices bacon, chopped and browned, fat reserved
- 1/2 cup chopped ham
- fresh ground pepper to taste
Instructions
- Mash the potatoes in a large bowl gently with your hands.
- Add the rest of the ingredients except for the reserved fat. Toss to mix.
- Heat teflon or silverstone frying pan.
- Place bacon fat in pan, press potato mixture on top.
- Brown over medium heat until golden brown on bottom (about 1/2 hour).
- Invert on plate and serve.

per the instructions you need to "heat a teflon or silverstone pan." Yeah right, like my Irish grandmother owned a teflon pan. come on. I thought this dish used corned beef or sausages - not ham. I wouldn't bother with this recipe.

The Bubble and Squeak that my mother used to make was with left over corned beef, potatoes, carrots, onion and cabbage, like an enhanced Corn Beef Hash. The cabbage really adds to it!
