    Italian Meatballs for an Army

    This authentic Italian recipe serves 60 people, perfect for a graduation party or family gathering. With ten pounds of meat, your guests will never go hungry. These meatballs also only take a half hour to cook.

    Ingredients

    • 1 1/2 cup very finely chopped shallot
    • 5 tablespoons garlic, very finely minced
    • 15 tablespoons parsley, fresh and finely chopped
    • 5 cups Progresson Italian bread crumbs
    • 5 eggs, lightly whisked
    • 2 1/2 cups cold water
    • 10 tablespoons olive oil
    • 4 tablespoons salt
    • 1 1/4 teaspoon freshly ground pepper
    • 1 1/4 teaspoon ground nutmeg
    • 7 pounds ground beef chuck
    • 3 pounds ground pork
    • Flour

    Instructions

    1. Preheat oven to 325 degrees F and combine first ten ingredients in blender.
       
    2. Puree and place meat in large bowl.
       
    3. Mix the beef and pork together by hand and add the puree to meat mixture; combine.
       
    4. Using a medium-sized ice cream scoop, scoop out meatballs.
       
    5. Form each ball by rolling in palm of hand until tight and solid. (Balls should smaller than tennis ball, larger than golf ball)
       
    6. Toss lightly in flour to coat and brown in olive oil.
       
    7. When meatballs are browned, remove from stovetop and place in oven and bake for 30 minutes.
       
    8. Add your favorite sauce and serve.

    This Christmas, my family is hosting a dinner for everyone, and it seems this recipe will come in handy. All the kids love spaghetti and meatballs, and since this will serve almost sixty people and is faster than cooking a whole turkey, it will serve as the main dish while we wait for the turkey of course.
