Albondigas
Albondigas are tasty Mexican meatballs, often served in a soup. Serve Albondigas with tortillas and rice for real Mexican flavor!

Ingredients
- 1/2 pound ground pork
- 1/2 pound ground beef
- 1 egg
- 1/2 cup rice
- 1 onion, diced finely
- 1/2 teaspoon thyme
- 8 cups water
- 1 tomato, chopped
- 1 garlic clove, diced
- 1/2 cup chile huerta
- 2 sprig yerba buena
- 1 thick slice french bread
- 1/2 teaspoon cumin
- 2 carrot, sliced thin
- 1 cup peas, fresh or frozen
Instructions
1. Mix pork, beef, egg, rice, 1/2 of onion, and tomio together; make into small balls. Bring water to boil and add balls, simmer at low boil for 1 hour.
2. Add tomato, garlic, chili, and rest of chopped onion, let simmer 35 minutes. Add yerba buena and simmer 10 minutes. Soak French bread in small amount of soup broth until very soft. Place in blender with comino, chop together, add to soup. Next add carrots and peas, simmer until vegetables are tender. Serve.

I made this tonight without the mint as planned and using pico for the Chile Huerta Is was very thin and bland including the meatballs I tried adding salsa verde and even an entire package of salsa seasoning to make fresh but to no avail on the flavor A cornstarch slurry at least helped thicken it up a bit To be clear this didn't taste bad it just didn't really have a flavor at all I hope that I was simply wrong about what Chile Huerta is and that all of the flavor comes from there Otherwise I would only recommend this for those who don't like seasoned food I will gladly try again if anyone will post a way they found to flavor it up or can tell me what Chile Huerta actually is Also tomio is supposed to be tomillo which is thyme Comino is cumin Ms Editor I…Read More think some people may be turned off from this recipe from the start because of not knowing what some of the ingredients are It appears that a few words did not make the translation from Spanish to English The only translation for Chile Huerta I can get on the net is garden salsa and none of my Hispanic friends have any idea what it is in either language If you know the source for the recipe perhaps you can find out

A friend told me that Yerba Buena is mint. As far as I can gather from the internet, Chile Huerta is basically fresh salsa/pico. I am going to nix the mint and try it with pico.

there are ingredients missing in this recipe...for instance what is tomio? What is chile huerta or yerba buena? Unless you live where these ingredients are common how are you supposed to know what they are?
