Poor Man's Potato Soup

Ingredients
- 4 large potatoes
- 2/3 cup butter
- 2/3 cup flour
- 1 1/2 quart milk
- salt, to taste
- pepper, to taste
- 4 green onions, chopped
- 1 cup sour cream
- 2 cups crisp-cooked crumbled bacon
- 5 ounces cheddar cheese, shredded
Instructions
- Bake potatoes in Microwave until tender.
- Melt butter in a medium saucepan. Slowly blend in flour with a wire whisk until thoroughly blended.
- Gradually add milk to the butter-flour mixture, whisking constantly. Whisk in salt and pepper and simmer over low heat, stirring constantly.
- Cut potatoes in small chunks. When milk mixture is very hot, whisk in potatos. Add green onion, sour cream and crumbled bacon. Heat thoroughly. Add cheese a little at a time until it is all melted in.

You don't have to be poor to save some money. I do think, however, that 2 packets of bacon is a large amount so I am sure one packet would suffice. This sounds like a very soup. I would make it as it is no trouble to whip up. You could serve it as a starter.

Not only is it NOT a budget minded soup, but it IS one of the most unhealthy soups I have ever seen!!! Can we say clogged arteries?

I love this soup I need meal stretchers I am dissabled I live on very little and only have 15 a month in food food stamps I am nit married and I have to go to food pantries for help. I want to thank you for this I use instant potatoes but tastes great.

If you people can't handle these "heart attack" recipes, DONT'T MAKE THEM!!!!!! I get so tired of reading complaints about how fattening, too many calories, etc. Go to another site that has healthy recipes!!!!!!!!!!!!!!!!!!

THERE IS SUCH THING AS TURKEY BACON AND AS ALWAYS YOU CAN LEAVE IT OUT IF YOU DONT HAVE IT OR CANNOT AFFORD IT OR IF YOU ARE AFRAID OF DYING IF YOU EAT IT. I KNOW HEALTHY SKINNY PEOPLE WHO HAVE HAD A HEART ATTACK DIED BUT BACON AND BUTTER WAS NOT THE CAUSE... MAYBE TOO MUCH LOW FAT STUFF WITH ALL THE ADDITIVES MADE OF WHO KNOWS WHAT CAUSED THE SAME ??? js

I remember my moms reciepe about poor man soup .and we were poor. it didnt have the luxary of milk or cheese or sourcream

Thought about trying Turkey Bacon not so much fat. Turkey Bacon isn't cheap.
