Sweet Georgia Cracker Pie
When it comes to pie recipes, we don't like to kid around. This recipe for Sweet Georgia Cracker Pie is an original recipe passed down from generation to generation. Loaded with chopped pecans and made with a cracker crumb crust, it is mouth watering. Best right out of the oven, have the family lining out the door and waiting for a slice of Sweet Georgia Cracker Pie. With every bite they'll be yelling "sweet Georgia, that's good!"
Ingredients
- 3/4 cup to 1 cup saltine cracker crumbs (or about 14 squares)
- 1 cup sugar
- 2 teaspoons baking powder
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
- 3 large egg whites
- 1/2 pint whipping cream
- 2 tablespoons sugar
Instructions

Preheat oven to 350 degrees F.

Blend the cracker crumbs, sugar, baking powder, and chopped nuts. Stir in the flavoring.

Beat the egg whites til stiff and fold into the crumb mixture, blending well. Turn into a well-buttered 8 or 9 inch pie pan.

Bake in a 350 degree F oven for 35 to 40 minutes.

Cool on a rack and chill for several hours.
- Whip cream, adding 2 tablespoons sugar. Spread evenly over pie and return to refrigerator.
