Ingredients
- 1 pound ground beef
- 1 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 egg, slightly beaten
- 2 slices toasted bread, soaked in water (not too moist)
- 1 small onion, chopped fine
- 1 stalk celery, chopped fine
- 2 tablespoons oil
- 4 or 5 medium potatoes, peeled and quartered
- 4 or 5 carrots, cut crosswise
- 1 cup water
Instructions
- At least 30 minutes before cooking, combine beef with salt, pepper, egg, bread, onion and celery. Mix well and form 2 small loaves.
- Wrap loaves in wax paper to keep them firm.
- Heat cooker; add oil and brown loaves on all sides. Place carrots and potatoes around meat. Add water.
- Cover and bring to pressure. Cook for 15 minutes.

I made this for dinner tonight, and it was a hit. I love easy pressure cooker recipes like this. It completely saved dinner for me. I did place the tray in the bottom of my cooker so that the meatloaf would not sit on the bottom of the pot, in the water. I also added ketchup on top when this was done and browned it in the oven under broiler. It was great! This is definitely a keeper.

I've been toying with the idea of getting a pressure cooker for a while now! Not even sure if electric or stove top is best for me, but I read that while they cook fast, you have to wait 30 minutes or longer for them to cool down before you open it. That increases the wait time for serving dinner, so I'd like some opinions from the readers here, please. Thank you in advance!
