Ham Fried Rice
Ever wonder what to do with all your leftover ham from Easter or Christmas? Well, fried rice is one of the easiest ham leftover recipes you can make! If you've used up all that ham, it's no problem. Try adding cubed Chinese BBQ pork, Chinese sausage or even hot dogs, and you'll still have a mighty tasty dish.
Notes
- Variations: Use 2 teaspoons of salt or patis (fish sauce) instead of soy sauce for a "white" rice dish. Include crushed garlic, yellow or green onions before adding rice. You can throw almost any leftover in for a change. This recipe makes at least 4 large servings as a side dish.

Ingredients
- 2 cups long grain rice (uncooked)
- 1/2 cup cubed ham
- 1/2 cup cooked shrimp
- 3 tablespoons peanut or olive oil
- 3 eggs, lightly beaten
- 1/2 cup cooked green peas
- 2 tablespoons light soy sauce
- 2 teaspoons MSG (optional)
Instructions
- Steam rice according to package directions. Let cool and then refrigerate for at least 2 hours (preferably overnight).
- Heat the wok.
- Fry the eggs in about 1 tablespoon of the oil. Set the cooked egg aside.
- Add remaining oil to the wok and add the rice gradually by breaking it apart with your hands or a fork so it is unclumped. Lower heat and fry about 5 minutes.
- Add ham, shrimp, peas and chopped cooked eggs.
- Toss and fry a couple of minute, then add soy sauce and MSG (if using).
- Toss and serve.

This is a really flexible recipe judging from the number of variations included in the write-up. When I make fried rice, I also don't usually follow a specific recipe, but add and delete items depending on what I have at hand, or what I'm in the mood for. I usually add some green onions to the dish and normally snow peas if they're handy. I'll add shrimp if I'm cooking for my wife since she loves them, but I'll delete them if I'm making it for myself.

My family has come to like so much we have twice a month. Easy to make. I cook the peas and rice just before I combined all. Bring the ham to room tempture, saves cooking time. Done in thirty minets.
