Buffalo Chicken Salad

Preparation Time24 hr
Ingredients
- 2 boneless chicken breasts
- Olive oil
- Durkee's Red Hot Sauce
- Lemon juice
- Salt and pepper
Instructions
- Marinate the boneless chicken breasts in Durkee's Red Hot Sauce and a little olive oil, lemon juice, salt and pepper.
- Let the chicken marinade overnight.
- Preheat oven to 350 degrees F.
- Bake the chicken at 350 degrees F until cooked through.
- Let cool and tear into pieces, drizzling more Durkee's if desired.
- Toss with chopped celery, and homemade blue cheese dressing (mayonnaise, sour cream, chopped green onion, salt, pepper, lemon juice, and crumbled blue cheese).

I like spicy chicken and I agree it does look like a delicious chicken recipe. My favorite hot sauce is wild herb peri peri which we get here in South Africa and adds a nice herby taste to chicken. I like the idea of adding in grapes, pecans and mayonnaise. In fact that sounds like a wonderful idea as I have frequently added in the wild herb hot sauce to mayonnaise and made a dip. I'm looking forward to this one.

This is another delicious chicken salad especially to those who love spicy chicken. You can make this Buffalo Chicken in a breeze as there are only very few ingredients to prepare. You can also downplay the spiciness of this salad by using less of the red hot sauce otherwise, you won't enjoy your salad as appetizer. Instead of whetting your appetite, it will spoil it because it's hot and spicy.

I love chicken salad and have always made it with mayo, grapes, and pecans, but this spicy variation sounds like a nice change for people who like some heat in their food. Marinating the chicken breasts with the hot sauce and olive oil will infuse the spicy flavor all through the meat and make it tender.
